Take advantage of all those fresh beets from your garden or local market and kill two birds with one stone! Prepare a large batch of borscht, a wonderful Ukrainian beet soup, using simple, easy-to-acquire ingredients. Then, with the leftover beet leaves, create a filling and roll your own beet-leaf holubtsi (cabbage rolls). What better way to enjoy the taste of summer? Hands-on course. Materials: $20
